Granola Bars
1/2 cup honey
1 cup brown sugar
1/2 cup canola or olive oil
2/3 cup natural epeanut butter or almond butter
2 teaspoons vanilla extract
3 cups quick cooking oats
1/2 cup sunflower seeds
1/3 cup wheat germ
1/2 cup caisins or craisins
1/2 cup chocolate chips
Up to 2 cups other dried fruits and nuts (dried cranbeeries, dicaed apricots, chopped date, etc.)
Preheat the oven to 350 F. Grease a 9 x 13 inch baking pan or line with parchment paper.
Mix the honey, sugar, oil, peanut butter, and vanilla extract in a large bowl.
Stir in the remaining ingredients. You may add whatever you want as long as the mixture sticks together.
Press that mixture into the baking pan using your hands. (kids are great at this!).
Bake the bars for 15 to 20 minutes until golden. Baking longer makes them crispeier. Cool the bars on a wire rack.
Yield: 24 bars.
